Ok, so I'll get this out there right now...I'm no Pioneer Woman (see www.thepioneerwoman.com if you have no idea what I'm referring to), but I DO love to cook! I also enjoy sharing delicious things I've made with others, so I imagine you'll see quite a few recipes on this blog. One of my favorite things to do is try out a recipe on guests! So far I haven't bombed yet!
My dear friend Mindy passed this gem of a soup recipe on to me and I LOVE it! It's so tasty and good for you too, how can you go wrong with that combo?
Lentil Veggie Soup
2 pkgs Lipton onion soup or beefy onion
3 stalks celery, sliced or diced
3 carrots, sliced or diced
8 C hot water
1 1/2 C lentils, rinsed (no need to soak)
1 C brown rice
1 28 oz can diced tomatoes (with juice)
1 t basil
1 t oregano
1/4 thyme
Cooked ham, ground beef or turkey, or beef chunks cut small (optional)
Bring all ingredients to a boil, then simmer for 45 minutes
(After boiling, you can also transfer soup to a crock pot to simmer on low all day)
Top hot soup with shredded cheese and sour cream, if desired
I just realized I forgot to add the spices tonight when I made it, but it was still delicious! I didn't add meat today but I'll try that someday too. I think this may become a regular menu item at ouir house!
