Hummus & veggie plate

I got to visit my wonderful family last week in the Pacific Northwest. My brother and sister-in-law made a scrumptious (easy) dinner that I just have to share!

Ingredients:
fresh spinach leaves
red onion, thinly sliced
kalmata olives, thinly sliced (if desired, I don't care for them)
cucumber, thinly sliced
tomatoes, thinly sliced
avacado, thinly sliced
hummus, any kind
whole wheat pita bread, toasted and cut in quarters

Place veggies and hummus on a big serving plate. Give each person 4 pita quarters and let them have fun creating!

Alternative version:
I didn't have hummus the other day, so here's what I did instead....
I bbq'd some chicken breasts on the grill and sliced them up. We put good ranch dressing and a bit of havarti cheese on each pita wedge with the chicken then topped that with all the fresh veggies we wanted. It was delicious!
